Soy-Free Baked Haddock Recipe

Have you ever eaten haddock? We really hadn’t (maybe once or twice at a restaurant), but in an effort to both cook and eat a little more fish each week, we’ve tried some. Haddock is great! It is light, easy to cook, and not too fishy.

This baked haddock recipe is our favorite. As written here, we pair it with asparagus for a dinner that hits the spot any night of the week. The best part is that it only takes 20 minutes to make!

What You’ll Need

  • 2 haddock fillets, thawed

  • 3 tsp. garlic powder

  • 1 tbsp. lemon juice

  • Salt and pepper

  • 1 bunch asparagus

  • 1 tbsp. olive oil

What To Do

  1. Preheat the oven to 350 F.

  2. In a small dish (we use a 9x9 glass pan), coat the haddock fillets in lemon juice.

  3. Sprinkle 1 tsp. garlic powder over each fillet.

  4. Add a dash of salt and pepper to each fillet.

  5. Cut the ends off the asparagus and coat in olive oil.

  6. In a separate pan, sprinkle the asparagus with remaining garlic powder and a dash of salt and pepper.

  7. Bake both fillets and asparagus for 15-20 minutes, until fish flakes.

  8. Enjoy! Serve as is, or over rice.
